Origin of Gulbi

Since long time ago, Younggwang Gulbi has been renowned as a specialty of Beopseongpo to cater to king's table. The name "Gulbi' originated from the following episode. 

During the reign of Yejongjo, the 16th king of Goryeo Dynasty, Lee, Jagyeom made King Yejongjo marry her daughter, Soondeok. 

After Soondeok gave birth to Injong, he made Injong succeed the throne. In addition, Lee also made Injong marry his 3rd and 4th daughters. In this way, he grasped power and dreamed to be a king himself. But, as Choi, Sa Jeon bought off Chek, Jungyeong who was a company of Lee, Jagyeom, he was arrested and exiled to Beopseongpo. In Beopseongpo, he experienced a dried yellow croaker and presented them to the king. At that time, he named them gulbi(which means "not yielding") to show his undaunted will to the king lest they be interpreted as an adulation to relieve his guilty.

There is almost no loss in nutrition when gulbi is salted and processed according to the above table. Gulbi has much amount of protein, it is good for the growth of children, recovery form illness and good digestion. (from Food Cartel. Dr. Yoo Tea Jong - a professor of Goryeo University)

Processing 

Strictly select fresh croakers are kept for 5~24 hours after salt applying with bay-salt. 

Then, they are washed 3-4 times with clean salty water and 10(or 20 in case of small croakers) croakers are bundled with straw. 

Each bundled gulbi is suspended on the log hanger (of which diameter is more than 15 cm) in proper location. 

Processing is finalized after drying under the sun for 3-4 months in Beopseongpo, Younggwang where is free of air pollution and has most appropriate sea winds and humidity. 

Storage

Please hang gulbi in the airy shadow to avoid disqualification. For some products, you may keep it in freezing compartment of refrigerator after wrapping and drying it for 2-3 days. In summer season, you'd better keep it in refrigerator lest it go bad due to a yellow oil from the croaker.
